Peel, core, and chop apples into 1-inch pieces.
Place in a saucepan with water and lemon juice. Cover and cook over medium heat for 15-20 minutes until completely soft.
Remove from heat. Stir in sugar, cinnamon, nutmeg, and salt. Taste and adjust.
Mash with a fork for chunky or blend for smooth.
Serve warm or cool completely and refrigerate.
